Buffalo Chicken Cupcakes

A mix between a buffalo chicken calzone in the shape of a cupcake…This recipe is perfect for Sunday night football watching, or any day of the week when you need a quick and simple meal.

 

Ingredients:

1 Pillsbury pizza crust

4-6 chicken tenders/breasts

2 cups shredded mozzarella

1/2 of a large white onion

3/4 cup of Buffalo sauce

 

Equipment needed:

Cupcake pan, cutting board, large bowl, knife, pot to boil water, oven, measuring cups

 

 Instructions:

Preheat oven to 375 degrees.

Boil chicken until fully cooked.

Once cooked, shred chicken and place in a large bowl. Set aside.

Dice onion and place in same bowl as chicken.

Add 1 cup of shredded cheese and desired amount of buffalo sauce to same large bowl. Mix until fully coated in sauce.

On a cutting board open pizza crust from package and spread flat.

Leaving a few inches from the bottom, place buffalo mixture vertically along dough.

Starting from the bottom, roll dough over buffalo mixture until uniformed log-like-mound forms.

Slice 2-inch thick strips, place pieces into cupcake tin.

Add sprinkle of shredded cheese to top of “cupcakes”.

Bake for 8-14 minutes, or until crust is fully cooked through and cheese has become golden brown on top.

Let cool and enjoy!
